Gin

In recent years there has been a resurgence in the popularity and production of gin. When you make gin you start with a neutral spirt and add aromatic botanicals, which must include Juniper to give different flavours and aromas. With a small still to distil the botanicals into the spirit, distillers can create very different styles of gin.
